Jennifer Prinz-Shakespeare, DNP, APRN-C
My name is Jennifer Prinz-Shakespeare and I have been a nurse practitioner for 20+ years. I am originally from Westmoreland, Kansas. I attended Kansas State University where I received my Bachelors degree (1995). After I graduated from Kansas State University, I completed my BSN at Bethel College (1997) and worked as a bedside nurse for several years. My goal had always been to advance my practice and I completed my MSN at FHSU (2001) and DNP at Wichita State University (2019).
I have always had an interest in healthcare to include nutrition, diabetes/pre-diabetes and the nursing profession. My ultimate goal is to work with clients to achieve their health goals. My past experiences as a nurse practitioner have included diabetes management/education, pre-diabetes management/education and weight management/education.
Outside of work, I keep busy with family life. I live in Manhattan with my husband and two dogs. In my spare time, I love watching K-State sporting events -especially football! I also love cooking/baking, gardening, and spending time with my family!

Kate LaRosh, MS, RDN, LD
My name is Kate LaRosh and I am a registered dietitian nutritionist in the Manhattan, KS area. I grew up in Wisconsin and ended up in Kansas by way of Kansas State University where I studied food science and dietetics. Prior to K-State, I attended the Culinary Institute of America where I studied baking and pastry arts.
I first became interested in nutrition in my teen years and my excitement for nutrition grew as I learned more about the many benefits of a healthy lifestyle. I enjoy working with families and individuals to turn nutrition concepts into real-life habits.
I live with my husband, two cats, and two dogs in Wamego, KS. I enjoy reading, gardening, baking, and dancing, and am always interested in discussing new recipes!

Jordan Chen, MS, RD, LD
My name is Jordan Chen and I am the practice owner of Manhattan Nutrition Clinic. I was born and raised in Manhattan, KS. I have have always wanted to work in health care, but after realizing how important nutrition is for preventing the onset of so many diseases, I wanted to be in a career that helps people understand and implement good nutrition so they can have the best quality of life possible.
I graduated from Kansas State University in dietetics in 2015 and went on to graduate with my Masters degree at the University of Kansas Medical Center in 2017. I completed my clinical training at the University of Kansas Hospital in Kansas City. While there, I worked in diabetes research as well as had work/research experience at the Weight Management Center at KU.
I also have work experience as an inpatient dietitian at Stormont Vail in Topeka and Via Christi Hospital, as well as working in the outpatient setting and heading the cardiac rehab program at Manhattan Medical Group and Heart and Vascular Clinics. I have the passion and experience for helping patients with cardiovascular issues, weight loss, and diabetes management. I have worked with patients on a variety of other nutrition related concerns as well including gastrointestinal issues, malnutrition, and renal disease.
Some hobbies of mine include spending time with my family, being outdoors, and going on runs or walks. I have two little boys and you may also see me helping out at my husband's local restaurant here in Manhattan.
