Sesame Cucumber Salad

Dressing:

¼ cup lime juice (2-3 limes)

1 tablespoon brown sugar

1 teaspoon fish sauce

1 teaspoon toasted sesame oil

1 jalapeno or serrano chile, finely chopped

1 teaspoon grated fresh ginger

1 large clove garlic, grated


Salad:

2 cups thinly sliced cucumbers

8oz (½ bag) tri-color coleslaw mix

Salt, to taste

½ cup cilantro, thick stems removed, roughly chopped

2 tablespoons dill, thick stems removed, roughly chopped

2 teaspoons sesame seeds


Directions:


  1. Make the dressing by combining all of the dressing ingredients. Stir to dissolve the sugar.
  2. In a large bowl, combine cucumber, coleslaw mix, and dressing. Season with salt as desired. Let sit for 10-15 minutes or until the cabbage softens slightly.
  3. Add cilantro, dill, and sesame seeds just before serving. Toss lightly.
