Heart Healthy Black Bean Dip

Serves: 8, ~¼ c servings

Ingredients



1 (15 ounce) can no salt added black beans, rinsed


~2 tablespoons lime juice, juice from one lime, divided


½ teaspoon garlic powder


½ teaspoon chili powder


½ teaspoon ground cumin


1 medium avocado


½ cup finely chopped tomato


¼ cup finely chopped onion


¼ cup plain nonfat Greek yogurt


2 tablespoons diced pickled jalapeño


2 tablespoons chopped fresh cilantro





Instructions

  1. Combine beans, 1 tablespoon lime juice, garlic powder, chili powder, and cumin in a food processor. Blend until smooth.
  2. Transfer to a microwave-safe dish and microwave on high until heated through, about 2 minutes.
  3. Meanwhile, dice the avocado and toss with the remaining tablespoon of lime juice. Season with salt and pepper if desired.
  4. Top with avocado, tomato, onion, yogurt, pickled jalapeño and cilantro. Serve warm.
