Heart Healthy Black Bean Dip

Serves: 8, ~¼ c servings

Ingredients
1 (15 ounce) can no salt added black beans, rinsed
~2 tablespoons lime juice, juice from one lime, divided
½ teaspoon garlic powder
½ teaspoon chili powder
½ teaspoon ground cumin
1 medium avocado
½ cup finely chopped tomato
¼ cup finely chopped onion
¼ cup plain nonfat Greek yogurt
2 tablespoons diced pickled jalapeño
2 tablespoons chopped fresh cilantro
Instructions
- Combine beans, 1 tablespoon lime juice, garlic powder, chili powder, and cumin in a food processor. Blend until smooth.
- Transfer to a microwave-safe dish and microwave on high until heated through, about 2 minutes.
- Meanwhile, dice the avocado and toss with the remaining tablespoon of lime juice. Season with salt and pepper if desired.
- Top with avocado, tomato, onion, yogurt, pickled jalapeño and cilantro. Serve warm.
