 Serves: 6 

Ingredients

1 large sweet potato

1 Tbsp olive oil

½ onion, chopped

1 apple, chopped

1 cup half-and-half

1 cup low-sodium chicken broth

⅛ tsp cinnamon

⅛ tsp nutmeg

⅛ tsp salt

⅛ tsp ginger


Instructions:

  1. Peel, chop, and boil sweet potato until soft.
  2. In a medium saucepan, cook onion in olive oil for about 1 minute. Add chopped apple and cook for an additional minute. Add half-and-half, chicken broth, sweet potato, and seasonings. Cook until everything is hot.
  3. Transfer to blender and process until smooth. Can add additional half-and-half or chicken broth to make a thinner soup.

There are some recipes we make the same way every time. Traditional family recipes, like Mom’s chicken or Grandma’s cookies, must be followed to create the desired result. Other recipes have more flexibility. Many recipes we come across while scrolling social media can be tweaked to be made more nutritious without compromising the recipe’s integrity. With this in mind, we can start with almost any recipe and still end up with something that sounds good and is more nutrient-dense.
