Dense Bean Salad with Sun Dried Tomatoes

Ingredients

1 540 ml can chickpeas rinsed and drained

1 540 ml can cannellini beans rinsed and drained

2 shallots diced

1 cup mozzarella pearls sliced in half

2 cups cherry tomatoes halved

2 red bell peppers diced

2 cups fresh parsley chopped

¼ cup canned artichokes chopped

¼ cup sundried tomatoes thinly sliced

*optional additions: ¼ cup kalamata olives, ¼ cup hemp seeds, 200 g turkey breast

Dressing:

1/3 cup olive oil

¼ cup apple cider vinegar

1 teaspoon salt

½ teaspoon ground black pepper

½ teaspoon garlic powder

2 teaspoons oregano

1 teaspoon honey (optional for sweetness)

Directions:

  1. In a large mixing bowl combine chickpeas, cannellini beans, shallots, tomatoes, mozzarella, bell peppers, parsley, artichokes, and sun dried tomatoes.
  2. For dressing, in a small bowl whisk together olive oil, vinegar, salt, black pepper, garlic powder, oregano, and honey. Adjust seasoning to desired taste.
  3. Pour dressing over salad and mix.
  4. Serve and enjoy!
