Dense Bean Salad with Sun Dried Tomatoes

Ingredients
1 540 ml can chickpeas rinsed and drained
1 540 ml can cannellini beans rinsed and drained
2 shallots diced
1 cup mozzarella pearls sliced in half
2 cups cherry tomatoes halved
2 red bell peppers diced
2 cups fresh parsley chopped
¼ cup canned artichokes chopped
¼ cup sundried tomatoes thinly sliced
*optional additions: ¼ cup kalamata olives, ¼ cup hemp seeds, 200 g turkey breast
Dressing:
1/3 cup olive oil
¼ cup apple cider vinegar
1 teaspoon salt
½ teaspoon ground black pepper
½ teaspoon garlic powder
2 teaspoons oregano
1 teaspoon honey (optional for sweetness)
Directions:
- In a large mixing bowl combine chickpeas, cannellini beans, shallots, tomatoes, mozzarella, bell peppers, parsley, artichokes, and sun dried tomatoes.
- For dressing, in a small bowl whisk together olive oil, vinegar, salt, black pepper, garlic powder, oregano, and honey. Adjust seasoning to desired taste.
- Pour dressing over salad and mix.
- Serve and enjoy!
