Serves: 4 

Ingredients

2 tsp olive oil

1 onion, diced

3 cloves garlic, minced

1 (15.5 oz) can low-sodium black beans

1 (15.5 oz) can fire-roasted tomatoes, diced

2 each chicken breasts, cooked and shredded

2 cups low-sodium chicken broth

1 cup shredded cheese

1 tsp chili powder

½ tsp cumin

¼ tsp cayenne pepper

¼ tsp black pepper

1 bay leaf

½ cup cilantro

Tortilla chips for serving


Instructions:

  1. In a saucepan sauté onion and garlic in olive oil. Add beans, tomatoes, chicken, spices, and broth; bring to a boil.
  2. Reduce heat to a simmer, cover, and cook for 15 minutes.
  3. Top with cheese and cilantro. Serve with tortilla chips.
